Roma or Plum tomatoes have an elongated-oval shape, and they grow to about 3 inches long.

Bright red, smooth and thick skin with meaty flesh, high sugar and acid levels, and low moisture content compared to other tomato varieties, ideal for cooking down into a tomato sauce or paste.

These have a distinctive oval shape. Their flesh is firm, and they have less liquid in the center. They are an excellent choice for pizzas and pasta dishes and their thick flesh and texture makes them ideal for the grilling.

Round Tomatoes

These are the well-known and regular tomato we all are used to see. A round variety and are the most popular type of tomato.

Round tomatoes are large, round and red usually used for slicing and salads. Can be harvest green for frying or gas to ripen as well as left to ripe in the plant and be called vine ripe tomatoes.

Tomatoes on The Vine (TOV)

Lycopersicon esculentum

Commonly confused with the term vine-ripened tomatoes, the TOV or tomatoes on the vine, are marketed and sold stem-on, with clusters of four or five tomatoes to each vine. As they ripen to a later stage of maturity, they have a higher sugar content, are uniformly bright red color.

Do to the high perishable condition of the tomatoes, long-life varieties are commonly used for this presentation. In addition to provide a very good indication of the freshness of the fruit since the calyx, the green spiky bit to which the fruit is attached, deteriorates quickly after harvesting.
